Irish Vegan Festival

My new ‘Polly’s Vegan Bounty’ aprons.

The Irish Vegan Festival was held in Belfast at the Waterfront Exhibition Centre last Saturday. After the grand success of last years event, the organisers found a much bigger venue for this year. This resolved all the issues visitors encountered last year with queuing in lines in the rain for hours on end due to the capacity of the smaller venue. This new venue is much bigger! The stalls are further a part and there is a lot more room to wander about. The increase in size has also allowed for more stall holders. If you didn’t come last Saturday due to your experience with queuing the previous year, you really missed out! There was no waiting around. There is another event on the 14th of October this year. Lest We Forget

Fresh from the oven.

Since writing this blog, I’ve come to realise how nostalgic food is for me. I’ve become really aware that I associate meals and recipes with certain people and memories and places in time. I’ve enjoyed reflecting on this even though it wasn’t an entirely deliberate intention (other than that I planned to incorporate various family recipes from time to time).

When April arrived, I had already foreseen that I would make ANZAC Biscuits for the blog this month. I guess as a food blogger there are certain holidays and celebrations that go hand in hand with particular recipes. For me, April is ‘ANZAC Biscuits’.

Mushroom ‘Sausage’ Rolls

My Dad makes great sausage rolls…well as far as I can remember they were great! That was back in my ‘non vegan’ days. I remember when I’d come home from university or when I was coming back for a visit from overseas, and the first thing I’d do was put in an order for his sausage rolls. No shop bought sausage roll could ever compare to my ‘Old Man’s’ recipe -with a side of his home made relish.

Weekend Pancakes

The very first picture I ever posted on instagram was of my first attempt at making these pancakes. I still look at that photo occasionally and I’m still impressed with it. Back then I knew very little about cooking without eggs. I’d been vegan for a year or so by that point but part of that time I was a raw vegan, living only on fruit and vegetables and the rest of the time I was struggling by on film set catering.  I hadn’t invested much time in baking at all. Since then, I’ve learnt a lot.

Spring has landed! The flowers are back, the days are longer and I have been able to remove one of my many layers! All indicating that Summer is not too far away. It’s amazing the difference in my mood when the sun is out and I hear this weekend is meant to be a good one! I look forward to beach holidays and being outdoors and picnic’s and BBQ’s!

Save the Salad! Lebanese Pumpkin and Walnut Salad

Part of being vegan is knowing and accepting that restaurants and cafes wont always be able to accommodate you. It’s 2017 but it’s still a struggle at times. Who are these strange people who would rather surpass the burgers and chips in favour of rabbit food?! Well obviously we don’t want to eat salad all the time but when the menu is looking bleak, you can usually find some kind of salad arrangement to potentially modify when it’s slim pickings. I say this in my calm, non hungry, completely satisfied voice as I sit behind my laptop all warm and cosy. My partner however would testify that I’m not always so calm and rational when the ‘hangry’ version of myself escapes and I’m faced with a potentially disappointing lunch!

Picante Blue Cheese

*This was the first cheese we tasted and we feel like we started at the top! Neither of us were previously Blue Cheese eaters and I was actually almost going to pass up getting it because I just didn’t think I’d like it or have anything to compare it with. Even the pungent smell of a real blue cheese would turn my stomach. This smell was by no way overpowering like a heady blue. The texture was really creamy and soft and the flavour was delicious, just the right balance of saltiness and not too sharp. It was the most flavoursome of all the cheese we tasted and was our winner by a country mile!

Mushroom Risotto

The final product. It should be really soft with no excess liquid.

I always used to be put off making risotto because I thought it was really difficult. I am terrible at cooking rice, I hold my hands up and admit it! I just never seem to master the art of getting it quite right and risotto seemed like a technically lofty goal! I think because I’ve also had terrible experiences ordering risotto in restaurants, I thought ‘if the pro’s cant even get it right, how am I going to be able to?!’
